Hi everyone.... well as the summer seems to be gone for the moment, I thought this week I would give you a lovely savoury recipe... absolutley delicious... and also to let you know that The Cake and Crumb will be appearing on Ireland AM next Monday morning between 7and 10am.. so make sure you watch out for us.. very nervous and excited!! Chicken Croquettes 25grms butter 30grms cornflour GF 130mls milk 20ml olive oil 1 chicken fillet, skin on 1 garlic clove, finely chopped 1cup GF breadcrumbs (ours) 1 egg, lightly beaten veg oil, for frying salt and pepper Melt the butter in a pan, add the cornflour stir to combine, then add the milk and mix to a smooth thick sauce. Cover and remove from heat Heat oil in pan and cook the chicken with garlic until chicken is browned and cooked through. Put chicken in food processor and process until finely chopped. Stir into sauce and mix well. Add plenty of salt and pepper to taste and leave to cool completely When cool shape mix into 15 bite sized pieces, dip in beaten egg and breadcrumbs. Deep fry in hot ilf for approx 1-3 min until crisp and golden. Serve while warm.. Yum:) Hope you all enjoy this dish.. so until next week, (I'll tell you all about the TV experience) Happy cooking.
